Soup for the body, mind and spirit

Onions contain Sulfur which s critical for healthy hair, skin, nails and SUPER powerful for liver health. Pacific cod (buy it WILD) is packed with protein and low in calories if you are watching your waistline. Not to mention that cod is good for your brain.
Perfect for your body, mind and your soul on a cold day like today.

INGREDIENTS
2 Tbsps sesame oil
1/4 cup sliced shiitake mushroom caps
1 large onion sliced and halfed thinly or 2 cups
1 tablespoon low sodium tamari sauce (find it in the soy sauce aisle)
1/4 cup sake
4 cups vegetable broth
1 pound boneless, skinless Pacific cod cut into 1 inch pieces
fast cooking veggies of your choice like kale pieces, spinach or swiss chard

DIRECTIONS
Heat oil over low to medium heat in a heavy-bottomed soup pot. Add the shitake and onion and saute for 4 minutes. Add the tamari and the sake. Saute until mushrooms and onions are tender (about 3-4 mnutes)
Add the veggies you chose and cook for 3-4 minutes or just until slightly limp
Reduce heat to a simmer and add the fish.
Cook for about 2 minutes or until the fish is just cooked through DO NOT OVERCOOK or fish will become tough.
Remove from heat.
